Yum! But my first attempt went rather dry at 30min in the oven on fan heat, so I increased the coconut milk by double. We also found the cumin quite dominating, so I’d likely try again with a light sprinkle instead. I also didn’t add the olives, as I followed the ingredients from the website instead

Really yummy!! Ended up using canned sweet potato instead of fresh and omitted the olives( not a fan); forgot the cilantro and was one can shy of coconut milk so mine ended up being thick. Overall very tasty ! I would totally make again :)

Super easy to do and v healthy. Don't miss the black olives as they balance out the dish's flavour incredibly. Perhaps it could do with less lentils or some added butternut squash so the rate lentils/potatoes is not 500/500gr
