- 1 Tbsp. cumin seeds (15ml)
- 1 medium onion (finely chopped, about 2 cups/500 ml)
- 3 cloves garlic (minced)
- 4 tsp. fresh ginger (20ml, grated)
- 1 tsp. ground turmeric (5ml)
- 1 tsp. ground coriander (5ml)
- 1/4 tsp. red pepper flakes (or to taste)
- 1 sweet potato (medium/large, peeled & cut into 1/4-to 1/2 inch dice, about 3 cups/750ml)
- 1 can chickpeas (14-ounce/398ml, drained & rinsed, or 1 1/2 cups, 375ml cooked chickpeas)
- 1 can diced tomatoes (14-ounce/398ml, with juices)
- 1 can light coconut milk (14-ounce/400ml)
- 1 pkg. baby spinach (5-ounce/142g)
- freshly ground black pepper
- basmati rice (cooked)
- quinoa
- millet (or sorghum)
- chopped fresh cilantro (optional)

Definitely a 10/10 if you like spice this is definitely for you maybe you can deduct some red pepper flakes if it’s too mich for you but it taste delicious.
