- 1 cup red lentils (split lentils)
- 2 Tbsp. coconut oil (ghee, or vegetable oil)
- 1 yellow onion (diced)
- 1 Tbsp. fresh ginger (grated, or minced)
- 4 cloves garlic (– minced)
- 1 tsp. cumin seeds (or substitute ground cumin)
- 1 Tbsp. garam masala (spice, optional)
- 1 tsp. fenugreek leaves (optional, but tasty)
- 3/4 tsp. salt
- 1 tsp. honey (or maple)
- 2 bay leaves (or 8 fresh curry leaves)
- 1 serrano chili pepper (or jalapeño slit down the side vertically, optional)
- 1 sweet potato (medium, or yam, diced into ¾ inch cubes, skins OK, other veggies include cauliflower, green peas, spinach, kale, carrots, etc)
- 3 cups water
- 2 medium tomatoes (diced, or one can diced)
- 1 handful cilantro leaves (fresh, or chopped scallions for garnish, optional)
- flaked coconut (optional)
- 3 Tbsp. ghee (2- ,coconut oil or vegetable oil)
- 1 tsp. cumin seeds (or coriander)
- 1 tsp. fennel seeds
- 1 tsp. black mustard seeds (optional, but amazing)
- 8 curry (leaves ,optional, but doubly amazing)

It’s almost entirely lentils; extremely flavorful because of the ginger and turmeric, but there’s no paste element holding the tomatoes, potatoes and lentils together. There’s also no clarification on how long the lentils should soak?
