- 1 1/2 cups sweet potatoes (cooked and mashed, 2-3 sweet potatoes)
- 1/2 cup canned black beans (drained and rinsed)
- 1/2 cup cooked quinoa (I cook mine in veggie broth for added flavor)
- 1/2 cup oat flour (click here to make your own)
- 1/3 cup frozen corn (sweet)
- 2 green onions (including the green parts, finely chopped)
- 2 Tbsp. red bell pepper (chopped)
- 2 Tbsp. cilantro (finely chopped)
- 1/4 tsp. chili powder (chipotle, may add more to taste, see bottom note)
- 1/2 tsp. cumin
- 1 tsp. oregano
- 1/4 tsp. kosher salt
- pepper (to taste)
- olive oil
- 8 oz. light sour cream
- 1 lime (small, or to taste)
- 1 lime
- 1 Tbsp. chopped cilantro (add more if you like)
- 1/4 cumin
- 1/2 chili powder
