I had high hopes and was looking forward to making this recipe, but I think it calls for WAY too much amaranth. It came out more like an amaranth porridge rather than a soup. I would try it again, but I'd definitely adjust the ingredients. Also, there's no recipe in the link (page not found) so I had to do a google search to find a recipe.
