- 1 white onion (chopped)
- 1 green pepper (chopped)
- 2 1/2 cups low sodium chicken broth (or vegetable broth)
- 28 oz. crushed tomatoes
- 1 canned black beans (16 oz., drained and rinsed)
- 1/2 cup quinoa (uncooked, rinsed, this is optional, but makes for a delicious, heartier chili!)
- 2 Tbsp. garlic (minced)
- 2 Tbsp. chili powder
- 1/2 tsp. paprika
- 1 tsp. ground cumin
- 1/4 tsp. cayenne pepper
- 1/4 tsp. salt
- 1/4 tsp. black pepper

Added a jalapeño and turned this into a vegetarian option served on Fritos with sour cream and cheese!!!! Perfect
