- 2 cups heavy cream
- 1 3/4 cups sharp cheddar (aged, finely grated, the older and sharper the better)
- 2 cloves garlic (grated)
- 2 Tbsp. thyme (chopped)
- 1 tsp. salt (if using unsalted butter)
- 1/2 stick butter (aka 1/4 cup or 4 tablespoons)
- 1/4 tsp. ground nutmeg (grate it fresh if you have it)
