- 2 Tbsp. raw honey
- 2 Tbsp. water (using the water you soaked the dates in is fine ONLY if you are using dates)
- 2 1/2 Tbsp. fresh lime juice (plus an extra squeeze at the end if desired)
- 1 tsp. lime zest (finely grated)
- 2 Tbsp. balsamic vinegar
- 2 cloves garlic
- 1/2 tsp. salt
- 6 Tbsp. olive oil (or avocado oil)
- 1 pinch red pepper flakes (optional, for spice)
- 2 sweet potatoes (large, peeled and cut into 1/2-1 inch cubes 4-5 cups)
- 1/2 Tbsp. bacon fat (reserved, or other cooking fat)
- 1 pinch sea salt
- 1 pinch black pepper
- 1/4 tsp. onion powder
- 1/4 tsp. smoked paprika
- 6 slices sugar (nitrate free bacon, free for Whole30**, cut into pieces)
- 3/4 cup walnuts
- 1 tsp. bacon fat
- chopped parsley (finely, or cilantro for garnish, optional)
