    Best pancakes ever! I added another 1/2 cup of sweet potato, switched to whole wheat flour, and added 1/2 cup of wheat bran and 1/4 cup of oat bran. I used olive oil instead of butter. Delicious!

    My wife and I really liked these, and definitely restaurant quality. Some of the best pancakes ever! I halved the recipe and it made 11 pancakes. We freeze them, then put in toaster to rewarm them for a quick breakfast.

    I will be making these delicious pancakes again and again!! It's like a sweet potato pie in a pancake. I made hickory smoke bacon and sage sausage to accompany. Best breakfast ever!!
