- 1 Tbsp. rice vinegar (or sub apple cider vinegar)
- 1 Tbsp. soy sauce
- sea salt (to taste)
- 2 tsp. olive oil
- 2 cups cherry tomatoes
- 4 sweet potatoes
- 2 lb. noodles
- 8 oz. spinach leaves (package of, or about 4 big handfuls)
- toasted cashews (optional)
