- 1 bunch leafy greens (like kale or chard, ribs and stems removed)
- 1 handful fresh flat leaf parsley (optional but it does give the pesto a nice fresh flavor)
- 3 Tbsp. pine nuts (or blanched almonds, lightly toasted)
- 1 large garlic clove (peeled and chopped)
- 1 Tbsp. lemon juice
- 1 pinch red pepper flakes
- 1/4 tsp. Himalayan salt (or fine sea)
- 2 Tbsp. extra-virgin olive oil
- 2 Tbsp. water (reserved cooking, to thin as necessary)
- 1/4 cup pecorino romano (finely grated, for serving, optional)
