- 2 scallions (minced, white and pale green parts)

- 15 oz. chickpeas (rinsed, drained and patted dry)
- 1 pinch salt
- 1 tsp. lime zest (grated)
- 1 sweet potatoes (very large, or 2 medium, scrubbed, no need to peel)

- 1 cup cilantro (finely chopped)
