I had all the ingredients but reduced to one serving. Fastest way to cook sweet potato is to slice it up & pan fry in olive oil for approx 8 min. Transfer to paper towel to absorb excess oil cools in 5 min. Add to frozen mango/reduced sugar vanilla flavored almond milk mixture then add spinach…add water as needed to get desired consistency. Super filling & tasty.
