- 2 shallots (thinly sliced)

- 1 tsp. brown sugar
- 2 sweet potatoes (peeled and sliced thinly on a mandolin)
- 6 oz. goat cheese (crumbled)
- 1 Tbsp. roasted pepitas
- 1 1/2 Tbsp. olive oil
- 1 tsp. fresh lemon juice
- 2 Tbsp. flat leaf parsley (chopped)
- 2 tsp. fresh basil (chopped)
- 1 garlic clove (minced)
