- 1/2 tsp. cumin
- 1/2 tsp. paprika (smoked hot, or chipotle powder)
- 1/4 tsp. cayenne
- sea salt (to taste)

- 6 whole wheat tortillas
- 2 roasted red peppers (I used jarred)
- 2 cups black beans (cooked, or 1 can black beans, rinsed and drained)
- 1 cup shredded Jack cheese
- 2 avocados (ripe, from Mexico)
- 1 cup salsa verde (mild, jarred)
- 2 garlic cloves (roughly chopped)
- 2 tsp. jalapeño (fresh, deseeded and roughly chopped, optional)
- 1 lime (juiced)
- 1/4 cup Cilantro leaves (packed)
- 2 Tbsp. water (to thin as necessary)
- sea salt (to taste)
- 1 1/2 cups chopped romaine lettuce
- 1 red onion (small, finely chopped)
- jalapeño (Finely chopped, optional)
