- 1/2 cup coconut oil
- 1/4 cup almond milk (Or your fave dairy-free milk)
- 1 tsp. vanilla extract
- 2 large eggs (room temp.)
- 1 cup pure cane sugar (organic, Can also use coconut sugar!)
- 1/2 cup brown sugar (organic)
- 1 cup all purpose flour (organic, I used Bob's Red Mill)
- 3/4 cup bread flour (I used Bob's Red Mill)
- 2 tsp. baking soda
- 1 tsp. ground cinnamon
- 1/4 tsp. nutmeg
- 1/4 tsp. ground ginger
- 1/4 tsp. sea salt
- 7 Tbsp. pure maple syrup (organic)
- 3 Tbsp. unsalted butter
- 1/8 tsp. sea salt
- 1/2 tsp. vanilla extract
- 3/4 cup powdered sugar
- pumpkin seeds (optional)
