Excellent! Great diversion from taco Tuesday regular dishes. My nine year old does not like spicy so we left out jalapeños (served them on the side) and went easy on the cayenne and just used regular tomato chunks. Very fresh and flavorful! Served with freshly made guacamole and salsa. Will definitely make again. I used vegan cheese and it was great. Real cheese will make it super ooey gooey I’m sure. Enjoy! Excellent.

I tweaked this by using the same amount of veggies and black beans, but only 4 low carb flour tortillas and half of the sauce and cheese. I also added broccoli, but I will probably leave that out next time. I think I will try roasting the sweet potatoes next time and maybe adding carrots and zucchini.
