- 1 chopped onion (medium)
- 28 oz. plum tomatoes (whole)
- 6 oz. tomato paste
- 1 cup heavy cream (.....Use heavy cream to avoid breaking the sauce.)
- 1 tsp. kosher salt
- 1/4 tsp. crushed red pepper
- 1/2 tsp. dried oregano
- 2 Tbsp. olive oil
- 3 cups pasta water (.....very important)
- 1 cup pecorino (or grated Parmiginao)
- 1/4 cup basil (fresh chopped)
