- 8 oz. baby beets (steamed and peeled, chopped)
- 1 lb. brussels sprouts (washed, outer leaves removed, and thinly sliced)
- 1/2 cup dried cranberries
- 1/4 cup feta (crumbled)
- 4 cups chopped almonds
- 1/4 cup olive oil
- 1/4 cup apple cider vinegar (if you don’t like your dressing as tangy, use 2/3 cup olive oil and 1/3 cup apple cider vinegar)
- 2 garlic cloves (minced)
- 1/4 tsp. oregano
- 1/2 tsp. Dijon mustard
- 1/2 tsp. honey
