Super simple Thai style turkey burgers

  • 300 grams turkey (breasts)
  • 1 handful fresh mint (and coriander)
  • 3 spring onions
  • 1 knob ginger
  • oil (for frying)
  • 1 knob unsalted butter
  • 300 grams boiled potatoes (– or as many as you think you’ll eat)
  • 100 grams unsalted butter
  • sea salt
  • black pepper
  • buns
  • fresh spinach leaves
  • 4 light mayo (tablspoons)
  • 4 tablespoons low fat natural yogurt
  • 1 teaspoon seasoning (Thai seven spice, I used the Schwartz one which you’ll find with all the other herbs and spices in your local supermarket, but if you can’t find it you could go Chinese Five Spice instead)
  • 1 teaspoon chilli sauce (sriracha, if you don’t have it use Tabasco)
  • 4 tomatoes (plump, diced)
  • 1/2 sweetcorn (a small tin of, rinsed)
  • 1/2 red onion (finely diced)
  • extra virgin olive oil
  • rice vinegar
