- 1 onion (diced)
- 4 cups chicken broth
- 15 oz. black beans (drained and rinsed)
- 14 oz. kidney beans (drained and rinsed)
- 14 oz. corn (drained)
- 1/2 cup prepared salsa (your favorite, in this case that means whatever I need to use up in the fridge)
- 1/2 cup velveeta cheese (diced, or sharp cheddar if you are not into Velveeta, it just melts really well for this)
- 4 Tbsp. taco seasoning (or more to taste)
