  • 1 tablespoon olive oil (or coconut oil)
  • 1/2 cup onion (diced)
  • 1 teaspoon ginger (fresh, minced)
  • 2 cloves garlic (minced)
  • 10 ounces veggies (bag frozen, mixed and chopped, I opted for the "Chinese-style" mix)
  • 2 eggs
  • salt (to taste)
