- 170 grams unsalted butter (softened, divided)
- 1 Tbsp. garlic (grated, *, about 4-5 cloves)
- 2 tsp. dried parsley
- 1 tsp. dried rosemary (ground)
- 1 tsp. dried sage (rubbed)
- 1 tsp. dried thyme leaves

Ok, I just put my turkey in the oven, after the MOST frustrating time trying to mix lemon juice in softened butter and herbs. Oil and water don't mix! I dried the turkey as best as possible using almost a whole roll of paper towels, following directions that told me the butter mixture would not stick if the turkey is wet.... Two things here- the raw meat only gets but so dry (basicly "moist" is as good as it gets), and the lemon juice that does NOT mix into the herb butter makes the whole rubbing onto a dry turkey utterly impossible. And extremely messy and maddening. I thought the recipe sounded delicious and it sure as heck better be for the anxiety it produced. Maybe the recipe should have better instructions regarding the lemon and butter snafu?
