This turned out beautifully! It is a dish to make when you have the extra prep time. I would happily serve this to guests as it is quite a pretty presentation. Everything was cooked perfectly. I would say my slices were 1/8 - 1/4 inch approximately.

Excellent! So full of nutrients - I totally didn't get everything the same size, but no biggie. It was a healthy great change of pace!
