- 2 Tbsp. olive oil
- 1 small yellow onion (diced)
- 1/2 poblano pepper (diced; you can dice the other half and use as garnish if you like a lot of heat! If you want extra heat, keep the seeds. Otherwise discard them. If you can't find a poblano pepper, you can use a jalapeno.)
- 4 garlic cloves (smashed and thinly sliced.)
- 32 oz. chicken broth
- 14.5 oz. fire roasted diced tomatoes (2 cans, plus juice)
- 10 oz. diced tomatoes with green chilies (1 can)
- 15 oz. black beans (1 can, drained and rinsed)
- 2 cups cooked chicken (shredded, I recommend getting store-bought rotisserie chicken, but if you prefer to cook and shred your own, that's fine!)
- juice (of one lime)
- 1 Tbsp. chili powder
- 2 tsp. cumin
- 2 tsp. ground coriander
- 2 tsp. kosher salt
- 3 black pepper (cracks of)
- 1 tsp. smoked paprika (Regular paprika is fine if you don't have smoked.)
- 1/4 tsp. cayenne pepper (; more if you'd like to add more heat!)
- 1/4 cup fresh flat leaf parsley (chopped, or cilantro)
- diced avocado (Peeled and)
- shredded cheese

- poblano (Leftover minced, for extra heat, optional)
- tortilla chips (Crispy, crushed tortilla chips)
