- 2 lb. ground beef
- 8 slices bacon (julienned and cooked to crisp)
- 1 sweet onion (large, chopped)
- 2 cups kale (chopped fresh)
- 6 oz. mushrooms (chopped)
- 1 sprig fresh parsley
- 1 1/2 tsp. salt
- 12 slices bread
- 2 cups mixed salad green
- 1/2 cup balsamic vinaigrette
- 6 oz. mushrooms (finely chopped)
- 1 clove garlic (minced)
- 2 Tbsp. butter
- 4 oz. blue cheese crumbles

Directions
- julienne 8 slices of smokey bacon and tossed them into a large saute pan over medium high heat.
- While the bacon cooks to crisp, chop a large sweet onion. Transfer bacon to paper towels to drain. Pour off the bacon fat, but reserve about a teaspoon in the pan. Then add the chopped onions along with 2 cups of chopped fresh Kale. r
- In another pan saute 6 ounces of chopped mushrooms, a finely minced clove of garlic and 2 tablespoons butter. When the mushrooms are toasty brown add a sprig of fresh parsley rough chopped
