- 1 Tbsp. extra-virgin olive oil
- 1 Tbsp. fresh lime juice
- 1/2 tsp. sea salt
- 1 cup red cabbage (shredded)
- 1 cup green cabbage (shredded)
- 1 nectarine (sliced into thin pieces {peaches, plums or cherries would also work})
- 1 handful chopped fresh cilantro
- 1 handful chopped parsley (I actually used the tops of the carrots from my CSA box – cousin of the parsley plant)
- 1/4 cup red onion (sliced)
- 2 Tbsp. fresh lime juice
- 2 Tbsp. extra virgin olive oil
- 1 Tbsp. apple cider vinegar
- 1 lime
- 1/2 tsp. sea salt
- 1 pinch black pepper
