It’s good! I was tempted to add salt, but with the Stovetop Stuffing, it really didn’t need it. For my vegetarian husband, I used cream of mushroom soup. I suggest using the thick slider on your food processor.

This turned out great! Next time I might try using a mix of zucchini and yellow squash instead of all zucchini. A+ recipe, highly recommended!!

One of the best ways to use zucchini. We loved it. The stuffing mix made a flavorful crust top and bottom. The zucchini mixture was excellent. I thought that it was supposed to be 2 cups of grated zucchini, so that's what I used. I think that it would have been even better with 2lbs. as called for. I did not include the seeds, since the one I had was your late summer club variety. I also happened to use the heart healthy cream of chicken soup and for the sour cream I used 1/2 sour cream and 1/2 fat free yogurt. I would not change a thing. Wonderful way to use a plentiful vegetable.
