This was fantastic, I thickened it a little with some flour and served it in homemade bread bowls.

This soup turned out so delicious. I sautéed some ground turkey and added that to the soup for some protein. I also added a cut up leek and put a handful of parsley with olive oil in my food processor and added it. Towards the end I tempered 4 eggs to make it a little creamier. It was awesome and my husband loved it! This soup is malleable and can be made adding vegetables you like throughout the year!

This soup was chock full of good veggies, and this recipe fills up a whole pot. There are a few things I modified to adjust the taste of the soup to make it a little more flavorful, but the foundation for the soup is great. You can add some dry herbs, such as thyme, on top towards the end, otherwise splash in soy sauce or some magi for a bit more of a deeper profile. You don’t need as many tomatoes (really only 3-4), and it’s missing a grain or carb or some sort. I can see this great with some rice or pasta. I started with sautéing the onions in a separate skillet, adding the garlic, and then the tomatoes. In a pot, I added the broth and waited for it to boil before adding in the chopped squash and zucchini. When that warmed up to boil again, I added my skillet ingredients along with the corn and let it sit on medium heat for about 16-17’. At the end, toss in your flavor enhancers and the lemon and basil. This is a malleable recipe but mighty fine to start with. I’ll have some good soup for a week!
