- 2 lb. sweet potatoes (peeled and cubed)
- 3 ears fresh corn
- 1 zucchini (sliced into half moons)
- 1 yellow squash (sliced into half moons)
- 1 red bell pepper (diced)
- 12 oz. fresh green beans (cut into 1” pieces)
- 4 cloves garlic (minced)
- 1 Tbsp. unsalted butter
- 1 lb. ground turkey
- 1 tsp. onion powder
- 1 tsp. salt
- 1 tsp. garlic powder
- 1/2 tsp. black pepper
- 2 Tbsp. olive oil
- 6 oz. pesto (store-bought or homemade)
- 1/4 cup Parmesan cheese

Directions
- Preheat the oven to 350°F.
- Rinse and chop the sweet potatoes, corn, zucchini, yellow squash, bell pepper, green beans, and garlic.
- Transfer the sweet potatoes to a large pot and cover with water. Place the pot over high heat and bring to a boil. Boil 12-15 minutes until tender then drain. Set the other vegetables aside.

This was a BIG hit at my house where I live with my husband and our two young adult college students. Of course, we embellished it with some red pepper flakes on top and shredded more than the specified amount of parmesan, We also used regular potatoes instead of sweet. We will definitely make this again! Very flavorful!

You could taste each vegetable. All flavors were beautifully married. I added a cup of fresh mushrooms and the family loved it.
