Great! Very refreshing salad. I used orange peppers instead along with cherry tomatoes because that’s what I had but the ricotta cheese with vinaigrette just brought it all together.

This was a delicious summer salad! Very simple to prepare and a perfect way to enjoy heirloom tomatoes while they are in season! Purchased a 12 oz package of them which was a perfect amount for my husband and I. Used chopped red onion rather than sliced, otherwise followed recipe as written. Served with grilled shrimp/scallops and rice.
