  • 2 cups seedless watermelon (cubed)
  • 1 cup blueberries
  • 1/2 cup crumbled goat cheese
  • 1 cup fresh basil leaves (packed)
  • 6 tablespoons mayonnaise (Hellmann's® or Best Foods® Organic Original)
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • 1 pound shrimp (large uncooked, grilled or broiled)
  • 2 tablespoons toasted pumpkin seeds

    Directions

    1. Arrange kale on serving platter. Top with watermelon, blueberries and goat cheese; set aside.
