- 1 lb. large shrimp (peeled and deveined)
- 6 bamboo (or metal, skewers)
- 2 ears corn husked
- salt
- 5 oz. mesclun (or baby lettuce mix)
- 1/2 red onion (medium, thinly sliced)
- 1 cup cherry tomatoes (halved)
- 1 avocado (ripe, diced)
- 1/4 cup fresh lemon juice
- 1/2 cup extra-virgin olive oil
- 2 Tbsp. Dijon mustard
- 1 Tbsp. honey
- 2 cloves garlic (minced)
- 1 Tbsp. basil (freshly chopped)
- 1 Tbsp. chopped parsley (freshly)
- 1/4 tsp. salt

Directions
- -Combine all of the ingredients for the marinade/dressing in a small bowl. Set aside 1/3 cup of the mixture to dress the salad before serving.
- –Thread 4-5 shrimp onto each skewer, depending on the size of the shrimp.
- -Place the shrimp skewers in a large Ziploc bag and pour the remaining marinade over them. Seal the bag (removing any excess air) and refrigerate for at least 30 minutes. The longer you marinate your shrimp, the better it will taste. Duh.
