- 1 cup mint (tightly packed, roughly chopped)
- 1 cup parsley (tightly packed, roughly chopped)

- 1/4 cup goji berries (or currants, sultana's or sliced dates)

- 3 Tbsp. extra-virgin olive oil (cold pressed)
- 2 tsp. Dijon mustard
