Description
Drawing its inspiration from Israeli cuisine, this summer salad is creamy, light, and refreshing. Boasting radishes, plum tomatoes, cucumber, and green spring onions in a creamy herbed greek yogurt sauce featuring mint, lemon, and garlic, this cold summer salad is ready in just 20 minutes and packed with refreshing goodness. Serve with warm pita or naan for a light lunch on a warm summer afternoon. This recipe is vegetarian friendly.

- 200 mL whole milk
- 200 grams greek yogurt
- 2 pita breads (or similar flatbread)
- 3 plum tomatoes (chopped)
- 100 grams radish (finely sliced)
- 2 cucumbers (250 gr., peeled and diced)
- 2 spring onions (finely sliced)
- 15 grams fresh mint (chopped)
- 1 Tbsp. dried mint
- 25 grams fresh parsley (chopped)
- 2 cloves garlic (chopped)
- 3 lemon juice (spoonfuls, optional)
- 60 mL olive oil
- 2 Tbsp. white wine vinegar
- ground black pepper (Freshly)
- 1 Tbsp. sumac (or Zataar, Middle Eastern spices)

Directions
- Mix the milk with the yogurt in a bowl and refrigerate overnight. (Skip this step if using buttermilk.)
- Cut the bread into bite-sized pieces and place into a salad bowl.
- Cover with the milk and yogurt mixture and stir.
- Add the remaining ingredients.
- Season with salt and leave to rest for 10 minutes for the flavors to infuse.
