- 1 1/2 cups quinoa (uncooked, I use rainbow, but any kind works)
- 2 Tbsp. extra virgin olive oil
- 2 cups fresh green beans (ends trimmed and chopped into bite-sized pieces)
- 2 cups snap peas (fresh, ends trimmed and chopped into bite-sized pieces)
- 2 cups yellow zucchini (sliced into half-moons)
- Himalayan salt (Pink, or fine sea salt, or to taste)
- 2 cups baby spinach (fresh)
- 1 medium carrot (peeled and spiralized/julienned*)
- 1 beet (medium, peeled and spiralized/julienned**)
- 2 avocados (large ripe, pitted and sliced)
- 3/4 cup seeds (toasted pepita)
