- 55 grams caster sugar
- 100 grams unsalted butter (cold)
- 1 pinch salt
- 2 tsp. apple cider vinegar
- 60 mL water (iced)
- 1 tsp. vanilla extract
- 40 grams almond meal
- 600 grams stone fruit (stones removed and cut into wedges, I used a mixture of white peaches, apricots and red plums)
- 250 grams fresh blueberries
- 55 grams vanilla sugar (.plus 1 tablespoon extra for sprinkling)
- 1 egg (lightly beaten)
