- 1 red onion (small, finely chopped)
- 1 red bell pepper (small, finely chopped, I had some yellow peppers on hand and added a handful chopped up)
- 2 celery (ribs, and leafy tops, chopped)
- 2 cloves garlic (minced or grated)
- 1/2 tsp. crushed red pepper flakes
- 1 Tbsp. cilantro (finely chopped, use parsley if you don't like cilantro)
- 3 Tbsp. red wine vinegar
- 3 Tbsp. extra-virgin olive oil
- 1 Tbsp. lime juice
- salt
- freshly ground black pepper

I just made this. YUMMY! Such fresh flavors and it is filling, too. I only used half a red onion and a little more crushed red pepper than it called for. Served it on romaine leaves. This is a great salad to keep in the refrigerator for lunch on hot summer days.
