- 1/2 firm tofu (a block of, sliced into ½ inch thick slices)
- 5 shiitake mushrooms (rehydrated)
- 1 pkg. enoki mushrooms (ends trimmed and rinsed)
- 1 handful napa cabbage (cut into 2-inch pieces)
- 1 handful tong ho (washed)
- 2 scallions (white and green parts separated)
- 1 vermicelli noodles (small bundle of dried mung bean, or shirataki noodles)
- 1 Tbsp. vegetable oil
- 12 oz. beef (thinly sliced fatty)
- 2 cups dashi stock (mushroom soaking liquid, or chicken stock)
- 2 steamed rice (servings)
- 2 egg yolks (pasteurized, optional)
