- 2 garlic cloves (minced)
- 1 inch fresh ginger (piece of, grated)
- 1 cup sugar snap peas (cleaned fresh)
- 2 Tbsp. red chili flakes (less if you do not like spicy)
- 2 Tbsp. sesame oil
- 1 Tbsp. olive oil
- 2 eggs (whipped)
- 1 lb. extra large shrimp (peeled and deveined)
- 1/2 lime juice
- 1 tsp. honey
- 2 tsp. less sodium soy sauce
- 2 scallions (trimmed and green and white parts chopped)
- 1 Tbsp. chia seeds
- 1 cup quinoa (I used tri-colored mix)
- 1 1/2 cups vegetable stock (or chicken stock, I used vegetable)
