- 1 tsp. cream of tartar
- 1/2 salt (slightly rounded – not quite ¾ teaspoon)
- 8 oz. unsalted butter (if you use salted butter, use only ¼ tsp. salt, softened)
- 2 cups granulated sugar (scant)
- 3/4 tsp. vanilla extract (good)
- 1/2 tsp. lemon zest (optional, I didn’t use this)
- 3 egg yolks
- 2 cups powdered sugar
- 2 Tbsp. butter (– softened)
- 1 pinch salt
- 1 tsp. vanilla
- 2 Tbsp. hot water (might need more)
- 2 1/2 tsp. lemon juice
