Perfect for cold weather and great over rice (recommended) or noodles.
Ingredients

4 SERVINGS
- 1 onion (large, chopped)
- 1 celery stalk (chopped)
- 3 cubes chicken bouillon
- 3 carrots (diced)
- 1 can chicken broth
- 1 can diced tomatoes
- 1 egg
- 1 lb. ground meat
- 3 tsp. Parmesan cheese
- 1 tsp. garlic salt
- salt
- 2 Tbsp. olive oil
- 5 cups water

Directions
- Chop celery, onions and carrots, sauté in 2 tablespoons of olive oil.
- Add 5 cups of water, bouillon cubes, diced tomatoes and chicken broth. Cook to boil.
- Combine ground meat, cheese, egg and garlic salt. Make teaspoon size meatballs and drop into boiling soup.
- Drop in meatballs and simmer 45 minutes.
- Serve over noodles or rice.
