- 1 cup long grain brown rice (I used Uncle Ben's Brown Rice, but any long-grain rice will work.)
- 4 green bell peppers (large, bottom trimmed, cap end cut off and diced, and seeds removed)
- 1 onion (large, diced)
- 3 tsp. olive oil
- 2 sweet Italian sausage (links, about 8 ounces turkey, or other sausage of your choice. Use diced mushrooms instead of sausage for vegetarian version.)
- 1/2 tsp. ground fennel
- 1/2 tsp. oregano (dried Greek or Turkish)
- 1/2 cup grated Parmesan cheese
- salt
- ground black pepper
- 1/4 cup mozzarella cheese (grated)

I didn’t have sausage so I used hamburger and spiced it up with a bit of cayenne, garlic, basil and oregano. I used swiss at the end. It was yummy.

Amazing. I cut down on the oven cook time by about five minutes and used red and yellow peppers. Delicious.

Wow this is really good! I used Morningstar veggie crumble and Bragg sprinkle seasoning instead. I didn’t top it off with cheese.

I made this last night and oooohhhhh myyyy goodness!!!! It was soooo good.
Ok so groind fennel is extremely hard to find in Charlotte so I just got savory seasoning. And I have pork so I substituted for italian chicken sausage. This was soo flavorful and delicious.
First time making something like this. Leftovers were even better!!

I thought they were a little dry. I used pulled pork with rice a roni Spanish rice, chopped onion, and Parmesan cheese wish I had not let all of my moisture evaporate from rice first.

I made it for my Husband he loved it I kinda twert it with other spices & also mixed ground turkey meat as well

This was okay, but the filling ended up being a little dry and it didn't have as much flavor as I had hoped for.

Very good meal. I halved the italian sausage and added some ground beef as the italian sausage was too strong alone. The family didn’t like the whole peppers so second time I chopped two peppers and made a casserole with additional vegetables and the family loved it.

great recipe! ended up with bigger bell peppers so had a little extra room. added a layer of pasta sauce before adding the mozzerella, was absolutely delicious!

I made it with Chipotle seasoning and spicy parmesan. turned out to be excellent!

I used hot ground turkey instead of the sweet. My husband does not like sweet ground turkey. I also used red bell peppers and doubled the amount of turkey and spices. Turned out great!

This is the second time we’ve made this recipe. We love it we used a bit more Parmesan cheese. We also tried regular Miss and Alice it on top. great recipe

I used microwaveable brown rice and orange peppers, and it turned out delicious. I also used whole fennel seeds because I couldn’t find ground. I think the mozzarella added on top didn’t add enough to the dish to merit purchasing it special.

I made a bunch of these for work and people loved them. I did use hot Italian sausage instead because I appreciate an abundance of flavor ... I also tried the vegetarian version and added black beans, and lots of seasoning. It came out great.

Soooooo good! I was emptying out my fridge and had some bell peppers and mushrooms left so I decided to make this. Excellent recipe, easy, quick and yummmy!

The stuffed peppers were one of the best I have had and were very easy to make. The Italian sausage adds a nice depth of flavour- I did use hot sausage from our Italian specialty store as we like the spice. This is one of the few stuffed pepper I like to make. Also, reheats well for lunch the next day. I change it up by using a slice of provolone cheese and melting that on top if I do not have mozzarella.

Such a satisfying combination of flavors! Such a quick dish to make that's both healthy and filling. I love bell peppers to begin with, but the Italian sausage, rice, and onion really raised the bar! Would highly recommend for anyone looking to try something new and eat a little healthier.
