If you really want to impress, these are the ticket. They're easy and gorgeous, too! First of all, do NOT make a special trip the grocery store. The Roasted Root encourages you to use what you have on hand. Instead of pears, I used a 15 oz can of well-rinsed and drained fruit cocktail. I added fresh rosemary, oregano, & lemon juice to the fruit; granulated garlic, fresh basil, ricotta, nutmeg, vanilla and butter extracts to the potatoes. (Hint: I put cilantro on this as a garnish and it didn't jive, so I wouldn't suggest using it in the recipe.)
