- 1 medium onion (diced, 1 cup)
- 1 medium carrot (diced, 1/2 cup)
- 2 rib celery (diced, 1 cup)
- 1 cup mushrooms (diced into small pieces)
- 1 1/2 tsp. dried thyme
- 1 tsp. sage
- 1/2 tsp. ground black pepper
- 1/4 tsp. cayenne pepper
- 1/2 tsp. dried marjoram
- 5 cups bread cubes (about 1-inch square, I used a whole wheat French loaf and just cut it into cubes, but any bread will do.)
- 1 1/2 cups vegetable broth
- 1/3 cup dried cranberries (or cherries)
- 1/4 cup chopped walnuts
- 1 cup vegetable broth
- 1 tsp. dried sage
- 1 tsp. dried thyme
- 1 tsp. dried rosemary
- 1 tsp. dried marjoram
- 1/2 tsp. ground black pepper
- 1 1/2 cups seitan
- 1/3 cup nutritional yeast
- 1 tsp. ground black pepper
- 1 tsp. garlic powder
- 1 tsp. onion powder
- 1/3 cup oats (oatmeal)
- 2 Tbsp. dried mushrooms (or 1 tbsp. mushroom powder)
- 1/2 cup aquafaba (liquid reserved from the chickpea can)
- 1 Tbsp. tamari sauce (or soy sauce)
- 1/2 cup chickpeas (be sure to reserve 1/2 cup of the liquid from the can)
- 1 cup vegetable broth
