- 2 Tbsp. scallions (chopped, shallots make a nice substitute)
- 1 clove garlic (chopped)
- 1 cup cheese (bleu)
- 1 cup panko bread crumbs
- 1 egg (lightly beaten)
- 1/2 cup grape tomatoes (cut in half or roasted red peppers)
- sea salt
- black pepper
- 1 tsp. shallot (chopped)
- 1/2 cup red wine
- 1/2 cup beef stock
- 1 tsp. butter (rolled in flour beurre manie)
- lamb (fat, from roasting pan)

This recipe was absolutely delicious! I found it helpful to watch the video first before preparing. I chose to use feta cheese for the stuffing and loved how it came out. I made one rack for two people which was four chops each. Which worked out well for us. The lamb was flavorful and succulent. I will definitely make this recipe again and again! I highly recommend it!
