I added spinach and a bit of butter and then added cooking sherry when I put it in oven

Delicious! Quick too! Followed instructions and was spot on. Used a cast iron pan and flipped it half way so it was cooked evenly. Served with mashed potatoes and garlicky broccoli rabe. This will make excellent sandwiches too!

Very nice. Family loved it. I added additional spices to the filling for some added flavor. I also flipped the tenderloin in the oven halfway through so it would be nicely browned on both sides.

Was nice and tender with decent flavor but I think it could’ve used something else like Maggie sauce in the mix and maybe on the pork itself overall pretty good

This was amazing!! The pork was so tender, and even good 2 days later. We made extra filling and fried gnocchi in it with some spinach. Next time we are going to try adding olives to the filling!

Gorgeous recipe. I bought tenderloin from Costco which ends up being two tenderloins in the package, so I doubled the recipe. I had so much bacon grease from four thick slices of bacon that i didn't need additional oil. I also ended up with a bunch of leftover stuffing that I added it into rice that I cooked (along with some chicken stock and evoo). Absolutely delish!

De luscious......added jalapeños to the mix, wrapped the whole thing in fresh pepper bacon and smoked at 240.

Wonderful dish. Substituted chopped broccoli for the mushrooms, simply because that’s what we had, but it turned out beautifully. Next time I’ll forego most of the oil and rely on the bacon fat to sautée the stuffing. Had to spoon some off.

This is one of our favorite recipes! It is amazing! I always cook it in cast iron. I also add chopped up yellow bel pepper to the stuffing. It is Wonderful!

The cutting of the tenderloin was the hardest thing to do. I had a couple holes or thin parts. It came out tender. I know it was a tad over cooked. The sauce I made from the pan dripping real complement dish. I made two tenderloins one following the recipe the other with cream cheese spinach and bacon.

Awesome! I prepped it in the afternoon then cooked it up for dinner. I added fresh sliced apples in the pan while cooking the Pork tenderloin in the oven.
