- 5 lb. blade pork roast (ground)
- 1 Tbsp. white pepper (ground)
- 1 tsp. coriander seed
- 1/2 tsp. nutmeg (ground)
- 1/2 tsp. cardamom (ground)
- 8 cloves garlic (minced)
- 1/4 cup kosher salt
- 1 cup white wine
- 8 oz. ham (medium dice)
- 6 oz. pistachios (shelled)
- 15 lb. pork leg (boneless)
- 2 heads red cabbage (core removed, broken into large leaves)
- 2 red onions (each, cut into large rings)
- 1 cup balsamic vinegar
- 1/2 cup extra-virgin olive oil
- salt
- black pepper
- 2 Tbsp. butter
- 1/2 cup onions (finely diced)
- 1/2 cup celery (fine dice)
- 1/2 cup parsnips (fine diced)
- 1/2 cup Granny Smith apple (fine dice)
- 2 cups beluga lentils
- 1 cup apple juice
- 1 qt. chicken stock
- 3 sprigs thyme (fresh)
- salt
- black pepper
- 1 cup sherry vinegar
- 3 shallots (each, sliced)
- 8 peppercorns (each)
- 3 bay leaves (each)

Directions
- In a mixing bowl, add ground pork with remaining ingredients except ham, pistachios and pork leg and mix with the paddle attachment on medium speed for 5 minutes
- Add ham and pistachios and mix for one minute more
- Lay pork leg skin side down on a cutting board, cover with plastic wrap and flatten slightly with a meat mallet
