- 3 Ancho chilies (dried, seeds and stem removed, crumbled)
- 3 chilies (dried pasilla negro, seeds and stem removed, crumbled)
- 3 cups water
- 1 cup prunes (seedless)
- 1 onion (large, diced)
- 5 garlic cloves (smashed)
- 2 tsp. chili powder
- 2 tsp. cumin (ground or seeds)
- 1 tsp. coriander (ground or seeds)
- 3/4 tsp. canela
- 2 chipotle peppers (canned, plus 1 tablespoon adobo sauce, the “juice” from chipotle can)
- 1 1/2 tsp. salt (more to taste)
- 1/4 cup peanut butter (or sub tahini, almond butter, cashew butter)
- 1 oz. sweet chocolate (dark bitter)
- 1 cup cooked quinoa (or rice)
- 1 cup black beans (cooked)
- 6 poblano peppers (4–, blackened)
- salt
- pepper (to taste)
- 1/2 tsp. cumin (and coriander)
- 6 Tbsp. goat cheese (4 –, optional- you can leave this out, but it adds nice creaminess)
- toasted sesame seeds (optional)
- cilantro (optional)

Hubby, Keith, loved it. This mole sauce ROCKS!!! I halved the amount of chile powder and chipotles for him, sigh, and used gualijo & California dried peppers. I used 3/4 prunes and a 1/4 golden raisins. Subbed almond butter for the peanut butter, dark unsweetened chocolate, diced butternut squash for the quinoa, and an entire can of rinsed, black beans. I also chopped up a bunch of old bay-seasoned shrimp and threw 1/2 of package of goat cheese in. DELICIOUS!
