- 1 tsp. olive oil
- 1/4 cup yellow onion (diced)
- 1/2 tsp. dried oregano
- 1/2 tsp. paprika
- 1/2 cup frozen corn kernels (or fresh)
- 12 oz. veggie crumbles (ground-style, I used Yves Meatless Ground Round)
- 1/4 tsp. salt
- 3 Tbsp. fresh parsley
- 1 cup Daiya (shreds, I used mozzarella flavor, but their Pepper Jack or Cheddar style would be great too. Other brands of non-dairy cheese would also work.)
- 4 poblano peppers (medium-sized green)
- plain soy yogurt (optional)
- tomato salsa (optional)
